Thai-style roasted chili jam, with half the heat. This is the OG staple that contains roasted shrimp paste and fish sauce; delicious, funky umami, straight out of a Thai home. This is a key ingredient in many Thai salads - aka "yums" - and Tom Yum for its balance of spicy, sweet, tangy, and umami notes. This sauce is sure to make your taste buds sing.

This Nam Prik Pao is different than your typical chili crisp or crunch, chiefly due to it being an actual jam, featuring real palm sugar and tamarind. It's delicious and balanced with tangy tamarind and smoky notes of dry roasted chilis. With a base of fresh caramelized shallots and garlic, this is a perfect accoutrement to zhuzh up spreads, dips, stir-fries, and pasta. It's just as lovely straight-up on pizza, eggs, and our favorite - charcuterie boards!
